Dreamy Creamy Lemon Chicken Soup

I’m not a food blogger, but sometimes I invent recipes, and you need this one for your winter comfort food repertoire! Use a rotisserie chicken to make this a simple, easy weeknight meal with the most delicious leftovers.

Dreamy Creamy Lemon Chicken Soup

Ingredients:

One onion, diced

4-5 Cloves of Garlic (go crazy with more!)

3 carrots, diced 

½ teaspoon-ish Dried parsley 

½ teaspoon-ish dried oregano

½ teaspoon-ish dried dill

8 cups chicken stock (bone broth would be ideal, but make it easy, please)

1 can white beans (cannellini or Great Northern)

8 oz (1/2 lb) grain of choice. I personally LOVED this GF Stelline pasta from Jovial. (umm… don’t pay 16.99 for it, just sent the link for reference pic). It reminded me of eating chicken soup as a kid, but also it had the perfect texture. Just note that if you use brown rice or other grain, cooking time may be longer.

3 cups of cooked chicken (I used a rotisserie chicken for ease)

1 bunch of kale, finely sliced or torn (also just buy a bag of it for ease)

3-4 juicy lemons

1 Cup Heavy cream (optional… but I recommend)

Fresh grated parmesan cheese for garnish

Here’s how to make it:

  1. In a large stock pot or dutch oven, sautee onions in butter (recommended) or olive/avocado oil until they start to become translucent. Add your carrots and garlic, and sautee for about 5-7 minutes.

  2. Add salt and pepper to your veggies, then add the dried herbs. Sautee another minute or two.

  3. Pour in the white beans, pasta or grain of choice, and chicken. Bring to a boil , then lower it to a simmer. The amount of time you need to let it simmer will depend on your grain. Brown rice will take longer. The Stelline Pasta I recommended only took about 8 minutes.

  4. Squeeze your lemons into the soup, and add the chopped kale. Stir it in really good so it will wilt.

  5. Simmer the soup as long as you want, then add the heavy cream. I made this before baby bathtime then let it simmer for about 20-30 minutes while I put him to bed. VOILA- an angelic soup to enjoy while watching Downton Abbey on the couch, a rare weeknight treat (we often do dinner with the baby, but sometimes I like to eat after as a special treat)

  6. Garnish with fresh parsley if you have it, and fresh grated parmesan cheese. Squeeze a LITTLE more lemon and grind some fresh pepper if you’re feeling jazzy.
